Chicken Salad is my go-to light lunch. Here’ s my low FODMAP recipe that I hope you find as simple and delicious as I do.
Chicken Salad
Ingredients:
- 2 cups cooked and shredded chicken breast
- 1/4 cup lactose-free Greek yogurt
- 1 tbsp. low FODMAP mayonnaise
- 1 tbsp. lemon juice
- 1/4 cup chopped celery
- 1/4 cup chopped red grapes
- 1/4 cup chopped walnuts
- Salt and pepper to taste
- Fresh lettuce leaves
Instructions:
- In a mixing bowl, combine the cooked and shredded chicken breast, lactose-free Greek yogurt, low FODMAP mayonnaise, and lemon juice. Mix well until everything is combined.
- Add chopped celery, red grapes, and walnuts to the bowl and mix again.
- Season the chicken salad with salt and pepper to taste.
- Place a few fresh lettuce leaves on a plate.
- Spoon the chicken salad onto the lettuce leaves.
- Enjoy your delicious and easy to digest lunch!
